Amurri had a minor role in the 2002 film ''The Banger Sisters'', in which her mother starred, and guest-starred on an episode of ''Friends'' in Season 7 titled "The One with Joey's New Brain" along with her mother. In 2004, she appeared in ''Saved!'' (also starring Mandy Moore and Macaulay Culkin), which remains her largest role to date; she is currently slated to star in two major roles. Eva graduated from Saint Ann's School (New York City) and Brown University in 2007.

In 2009, Amurri signed onto Season 3 of the Showtime TV Series ''Californication'' as the character Jackie. In September 2004 switch to Mediaset replacing Laura Freddi in the Sunday Canale 5's show Buona domenica, with Maurizio Costanzo, where she remained for two seasons, until 2006. Between January and April 2006 hosted the Saturday afternoon show Tutti pazzi per i reality, a talk show about the most important events of the reality shows aired by Canale 5, Grande fratello and La fattoria. In the summer of 2005 also hosted the Saturday primetime show Sei un mito.

In 2007, hosted some events: Speciale buon compleanno Radio Italia, Speciale Natale in Vaticano, Dancing on Ice and the pilot La seconda volta.
